Cracked Pepper Rib Eye with Lager Sauce
2 -- 6oz Rib Eye
2 tbsp cracked black pepper
1 tsp Vegetable Oil
1 tbsp Butter (Unsalted)
Kosher Salt Spread the pepper out on a large plate or piece of wax paper Lightly coat top & bottom steaks with salt, then rub each side into the pepper.
Heat oil and butter in sauté pan over high heat. With high heat, sear steaks for about 2 minutes until are seared. Repeat on other side.
Lager Sauce:
2 tbsp minced Shallot
1/2 cup Beer
1/4 cup Beef Stock
1 tbsp Butter (unsalted) Add the shallots to the pan (over medium heat) and sauté briefly. Slowly pour lager (beer) into pan. Bring to a light boil then add beef stock. Bring the liquid back to boil and cook about 1 minute to thicken sauce, stirring occasionally. Add butter continue stirring until melted. Pour over steaks.
